5 Breakfasts for Busy Mornings

Where did summer go?!  We barely blinked our eyes and already kids are back to school!

Weekday mornings during the school year are always bustling with activity and things to remember. Wouldn’t it be great to take breakfast off your full plate? (Well, not literally, of course!).

We love these quick, easy and healthy breakfast ideas. Most of them are make-ahead, and all of them will make your life easier!

A Month of Smoothies

Prep these smoothie packs for an entire month and all you have to do each morning is drop the ingredients into your blender and press the start button!

Cottage Cheese & Pineapple Cups

Washing and cutting up fresh fruit each morning is time-consuming. Take a bit of prep time to cut up a pineapple (a fruit that keeps well refrigerated) and add cottage cheese for protein. Prep several breakfast servings in covered glass containers (layer the pineapple with the cottage cheese so the curds can soak up some extra sweetness). Get fancy and add pomegranate seeds and fresh chopped mint like this variation.

Breakfast Cookies

The word “cookie” doesn’t have to be synonymous with “unhealthy”. These breakfast cookies are packed with nutrition are truly an on-the-go meal. Let’s admit it, most of us used to say we’d never let our kids eat in the car. And now? These are perfect for when breakfast doesn’t quite make it to the table!

Muffin Tin Fritatas

These might be the cutest things you’ll ever eat. Make them on Sunday and store them in the fridge through most of the week so all you have to do is reheat them in the mornings.

Make-Ahead Parfaits

As the author of this recipe states: “The beauty of this -aside from the surpassing taste- is that less than ten minutes one day a week yields breakfasts for the entire week.” You can’t go wrong with that! Another great thing about parfaits is that you can get creative with ingredients – add in what your kids’ hearts (and tummies) desire.
